These are so delicious and light. The kids love them though you need a zillion serving bowls for the toppings.
For the fish:
1 pound fish (salmon or tuna work great, grouper might work too)
juice of one lime
crushed red pepper
2 tablespoons corn meal
1/4 cup flour
thinly sliced raw cabbage
hard shell tortillas
Mix the first nine ingredients in a glass bowl. Place the fish into a shallow baking pan and pour the mixture over. Let marinate about 15 minutes.
While it is marinating, mix the cornmeal and the flour. Then dredge the fish in the mixture.
Heat oil in a saute pan. When hot, add the fish and quickly saute on both sides. About 5 – 8 minutes per side.
While that is cooking, prep the toppings.
You can heat the soft tortillas to warm them up a bit but we didn’t.
When the fish is done, flake into chunks and serve along with all the toppings.
